When I think of cast Iron skillet dinners you can go so many ways but most importantly they are fun to make. Brussel Sprouts are one of my favorite vegetables and with chicken and apples they are a perfect combination.
Ingredients
2 lbs. of Boneless Chicken Thighs
3 tsp. Fresh Thyme, chopped
2 tbsp. Grapeseed Oil
1 package of Brussel Sprouts, shaved or shredded
1 sliced Apple
1 sliced Red Onion, medium
2 Garlic Cloves, chopped
3 tbsp. White Balsamic Vinegar
2 ½ tsp Brown Sugar
Salt and Pepper
Directions
Season Chicken thighs with Thyme, Kosher Salt, and Pepper. Put oil in skillet and cook chicken over medium heat for about 5-6 minutes per side until cooked through. Transfer to plate.
Add shredded Brussel Sprouts, sliced apples, red onion, and garlic to skillet. Stir the mixture until Brussel Sprouts are wilted and onions are soft, about 6 minutes. Stir in white Balsamic Vinegar and Brown sugar. Season the mixture with salt and pepper.
Return chicken to skillet
