Salsa
½ Medium onion, diced
1 Red Pepper, diced
½ c Cilantro, chopped
2 Garlic Cloves, diced
1 Mango, diced
2 tbsp Lime Juice
½ tbsp Salt
1 tsp Pepper
Mix Ingredients in medium bowl. Let chill until ready to serve
3 Medium Sweet Potatoes
3 Chicken Breast, diced
3 tbsp Jerk Seasoning (see recipe below)
Oil
Butter (optional)
Honey (optional)
Green Onion (optional)
Coat chicken with jerk seasoning (1 tbsp Jerk Seasoning per 1 lb. Chicken Breast, repeat step 1 twice) and let sit for 30 mins. then cook in skillet 3 to 4 mins. on each side till done.
Rub sweet potato with oil until fully coated and bake at 415 degrees until tender
When potatoes are done, split open and add butter to your liking. Spoon in chicken and top with Salsa. Drizzle honey and top with green onions.

2 tsp Onion Powder
2 tsp Thyme
2 tsp Parsley
2 tsp Sugar
2 tsp Salt
1 tsp Paprika
1 tsp Allspice
½ tsp Pepper
½ tsp Ground Nutmeg
¼ tsp Ground Cinnamon
1 tsp Cayenne Pepper
